Years ago, after an INFORMS conference in Phoenix, I drove out and spent a few days at the Saguaro Lake Guest Ranch in Mesa. https://www.saguarolakeranch.com/
The views were spectacular, and so different from what I'm used to on the U.S. east coast. I went horseback riding and kayaking, which I think you can do from there without staying overnight. It's less than an hour outside of Phoenix. It was such a memorable place, well worth visiting!
