Excellent choice! The Princeton Tiger (not to be confused with those Johnny-come-lately knock-offs at Auburn, LSU, etc.) was my second choice. For my first choice, I have to go with Sparty, one of the most recognizable mascots around (and, apparently, one of the most educated:

BTW, as a member of the first coed class admitted to Princeton, trust me when a say that the bronze tigers were the least of the adaptations required.

My favorite mascot is still the Princeton Tiger. I was a fan of the Tigers all through my youth. This website tells you a bit about its history as the mascot. Princeton was one of the first schools to play football in the 1890s.
I especially liked the fourth point on the website, which I did not know; I was very glad Princeton went coed.
